If you want to avoid cancer, you should cook broccoli this way

The popularity of broccoli in recent years has largely been due to its high levels of a particular type of beneficial compound called sulforaphane, which is known for its health benefits.

In Science Alert’s opinion, there is no surprise that broccoli pills are on the rise. Recent studies have shown that broccoli pills may play a key role in blood sugar control as well as possibly even having anti-cancer effects, which is why this compound seems to be gaining popularity.

According to a 2011 study, eating broccoli whole, as opposed to only taking a supplement, gave you a higher concentration of sulforaphane than taking a supplement, so a team of Chinese researchers decided to investigate how to cook broccoli.

It took them two years to reach a clear winner, and they published their findings in 2018 in the Journal of Agricultural and Food Chemistry. However, if you’re pressed for time, it’s still hard to justify it if you have other things to do.

As sulforaphane is not simply found sitting there in broccoli florets, ready for consumption, the vegetable contains a number of compounds known as glucosinolates.

Various cooking methods, such as boiling and microwaving, result in a significant reduction in the amount of glucosinolates contained in broccoli, based on studies that have been conducted.

Interestingly, very few methods have been used to report the concentration of sulforaphane in stir-fried broccoli and, to the best of our knowledge, no study has been conducted to investigate the stability of sulforaphane during the stir-frying process,” the researchers wrote in their study.

In their conclusion, the team concluded that the broccoli florets should be left to rest for about 90 minutes after being cut into small pieces before cooking; however, they also added that they hadn’t tested this but thought “30 minutes would also be helpful.”.
